Calcium chloride
Introduction
|
Calcium chloride has been used for decades in cheese production. Calcium chloride plays an important role in the coagulation process and affects curd formation. Thanks to years of practical experience and our own research department’s expertise, CSK food enrichment is a real specialist on the use of additives in cheese production. Product description and compositionCSK calcium chloride solution is a purified and standardised solution of the salt CaCl2. It is the product of an ingenious system of filtration and standardisation. A special filtration step is used to remove the unwanted particles and to make the liquid suitable for use in foodstuffs through standardisation. The filtration that CSK uses is remarkably refined, eliminating even microorganisms and preventing later sagging of the product. CSK calcium chloride is approved for foodstuffs and its E-number is E 509. Characteristics and propertiesStandard available: 33% solution (w/w)
QualityCSK delivers calcium chloride of high, consistent quality. This is achieved through strict quality control during the production process. Application in cheese production
Calcium chloride is primarily added in order to optimise the cheese preparation process and to Depending on the type of coagulant, the pH of the milk can be adjusted by adding calcium chloride. DosageThe ideal dose depends on many factors, such as:
